Ingredients:
You will need : One 6 pound stewing chicken - cut up ; 2 quarts water ; One large onion - quartered ; One cup chopped fresh parsley ;One celery rib - sliced ; Five chicken bouillon cubes; five whole peppercorns ; Four whole cloves ; One bay leaf ; Two teaspoons salt ; 1/2 teaspoon pepper ; One dash dried thyme ; Two medium carrots - thinly sliced ; Noodles.
In a large pot, bring to a boil the first 12 ingredients. Then Reduce heat; cover and simmer for two and a half hours or until the chicken is tender. Remove chicken from broth; cool. Then remove the chicken bones and cut up into chunks. Strain the broth and skim fat; return to pot.. Then add chicken and carrots. Bring soup to a simmer, lastly add noodles. Cover and cook for fifteen minutes or until noodles are tender.
