Homemade Chicken Noodle Soup Recipe

Ingredients:
Youy will need :  One whole roasting Chicken; 16 – 18 cups of water; Fifteen  carrots; One head of celery; Three large onions; 4 cups of dry egg noodles; 1 tablespoon dry basil; One  teaspoon dry dill; One teaspoon dry tarragon; One teaspoon dry parsley; Two tablespoons salt; Freshly ground black pepper.

Directions :

Place the whole chicken in a large pot with water and cover. Heat on medium and bring to a boil, then reduce heat to low and cook for about 50 minutes. While the chicken is cooking peel the carrots and cut into large chunks. Then cut the onions and celery into large chunks as well, set aside. Once the chicken has finished cooking remove and cool for about 10 minutes. Leave the pot with the water on the stove and continue to cook on medium. After the chicken has cooled, clean the chicken and save all of the meat making sure to remove the skin and fat. Place all of the chicken bones and scrapes in the cooking pot with the water, and continue to cook for another 2 hours.

After the two hours strain the stock in a large bowl and reserve. Clean out the pot and return to the stove again. Place the cut vegetables and seasoning into the pot along with ¼ cup of the stock and simmer for 20 minutes, remembering to stir often. Once all of the vegetables have cooked, add the remaining chicken stock and bring the heat up to medium until it is up to a boil. Then add the dry egg noodles and cook for 10 minutes. Finally add the cleaned chicken meat and reduce to a simmer.  Serves 8 – 10
